grapes sourced from the Poggio Turco vineyards, located on the high terraces overlooking the sea at the southernmost tip of the Island of Elba. This privileged location, at an altitude of 170 metres above sea level and with metamorphic granite soils, imparts a distinctive minerality to the wine. Sharing with Aleatico Passito the aromas of wild rose and hints of Mediterranean scrub, it stands out for its light structure, offering a long and complex tasting experience. The colour is reminiscent of Tea Rose, evoking sensations of freshness that are perfectly reflected in the wine.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>VINIFICATION<\/strong><br \/>\nAfter a careful manual harvest, the grapes are gently pressed to preserve their aromatic purity. The must, following a delicate clarification process, ferments at a controlled temperature between 18\u00b0C and 20\u00b0C, enhancing freshness and complexity. The wine then rests on fine lees for several months, enriching itself with structure and depth of flavour.<\/p>\n<p><strong>AGEING<\/strong><br \/>\nBottling takes place in late spring, followed by a long bottle ageing process that allows the wine to reach its perfect balance, refining its aromas and character.<\/p>\n<p><strong>TASTING NOTES<\/strong><br \/>\nColour: Bright pale pink.<br \/>\nAroma: Fruity and floral, with notes of rose, wild strawberry and cherry.<br \/>\nTaste: Fresh and savoury, with an aromatic and persistent finish.<\/p>\n<p><strong>PAIRINGS<\/strong><br \/>\nBeyond traditional pairings with seafood and rustic island cuisine, the Rosato delle Ripalte is an ideal companion for raw fish starters and risottos, especially those with asparagus.
