VERMENTINO DELLE RIPALTE

The Gorgaccio vineyards, where our grapes are sourced, lie between two ancient iron mines. This unique location imparts a distinct minerality to the Vermentino, while the proximity to the sea adds a special vitality to the vines.

VINIFICATION
After manual harvesting, the grapes are gently pressed. Following clarification, fermentation occurs at a controlled temperature between 18°C and 20°C.

AGEING
The wine remains in contact with the fine lees for several months before being bottled in the spring and further aged in bottle.

TASTING NOTES
Colour: Bright straw yellow with golden reflections.
Aroma: Citrus and floral notes with hints of Mediterranean herbs and mineral nuances.
Taste: Fresh and balanced, with a pleasant flavour and a lingering aftertaste reminiscent of the Mediterranean scrub.

PAIRINGS
An ideal companion to seafood dishes, molluscs, octopus, and shellfish. It also pairs beautifully with fresh cheeses and lightly aged cold cuts. A great choice to accompany white meats such as chicken, turkey, and rabbit, as well as risottos, omelettes, and mushroom-based dishes.
